Corn Dog Muffins

I found this idea at the site where cool ideas seem to gather....pinterest.  Quick, easy and portable, I had to give these a try!

Instructions:
Prepare a package of Jiffy Cornbread mix as directed on box

Fill muffin tins with paper baking cups.

Put a spoonful of the Jiffy mix along the bottom of the muffin cup.

Cut up a hot dog into small chunks. Put as many as you like on top of  layer of mix.

Finish filling up the muffin cups, adding chunks and slivers of hot dog.
Bake per Jiffy instructions and enjoy!

They were a big hit with everyone!  I'll be adding these to Beauty's school lunch bag on occasion.

Here is the pinterest pin from which I found this!

  1. This looks amazing. Maybe because I've been living off of rice for a month. :-)
